Why are the baked goods served at the White Rabbit restaurant so tasty? The answer to this question comes from an exceptional baker, Karol Nagórski, the head chef of the White Rabbit Bakery. He is a young, ambitious chef who discovered his passion for baking relatively recently, 4 years ago, and quite by accident.

It started with bread rolls, was followed by breads, and has now grown to more than a dozen types of baked goods and 400 breads a day, and it's not over yet. As he says himself, Karol used trial and error to select the right flour, prepare the ideal sourdough starter, which he "feeds" every day, and developed the arduous and demanding production process, which includes long proofing. It is thanks to this, and above all to the patience and commitment of the creator, that the White Rabbit breads are so popular.

Not content with what has been achieved so far, Karol has teamed up with Jakub Marchewka to produce a unique film on the art of baking. A teaser was released in June and the entire film is scheduled to be broadcast in September.

The main inspiration for the film was his childhood spent in Kashubia. It was through this experience that Karol embarked on this unusual project, drawing on old baking methods and traditional regional products and wild plants. He was all about development, looking for inspiration and wanting to show how bread is a creative matter. In the film, you can see the unique baked goods that could appear in the daily sales of the bakery, whose production is increasing.

The material will include, among other things, pumpernickel baked in clay or a sweet goat's cheese tartallette moulded in birch bark, as well as a variety of now-forgotten products reminiscent of ancient traditions such as calamus, sweet woodruff or buttermilk honey....

These other baked goods will amaze you with their form, delight you with their depth of flavour and carry with them a history of...

And Karol Nagorski's flagship baked goods can be tasted in the White Rabbit restaurant of the Quadrille Hotel and in a network of partner outlets.

From 2022, Charles took up the position of Head of Bakery at the Hewelke Bakery & Restaurant. it is from here that the baked goods are delivered daily to the White Kings restaurantk.
