The restaurant was established in 2015 on the initiative of Head Chef Marcin Popielarz, whose passion for cooking is deeply rooted in local traditions and products from the Kashubian, Kociewie, and Żuławy regions.
It is precisely Marcin Popielarz – currently Chef Patron of Biały Królik – who has set the tone and character of this unique place from the very beginning. As the founder and originator of the restaurant, he consistently develops its culinary identity, combining a love for local flavours with European finesse and experience gained over the years, both in Poland and abroad. Together with his team, he creates cuisine that surprises with its freshness, technique, and attention to every detail.
The team meticulously selects suppliers and products, with an emphasis on quality, ethics, and seasonality. The result of their work is dishes perfected down to the smallest detail, full of flavour and harmony.
